Ascorbic acid (E300) is used to prevent fruits and berries from turning brown during preservation. The recommended amount is œ to 1 teaspoon (œ to 1 g) per kilogram of mashed fruit or per liter of syrup. Dissolve the ascorbic acid in a little of the cooled mash or syrup and then add the mixture to the mash or compote.
